*What is a samosa?*
A samosa is a tasty snack from South Asia, filled with spiced potatoes, peas, and onions, wrapped in a crispy dough.
*Ingredients:*
For the dough:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 cup ghee or oil
- 1/2 cup lukewarm water
For the filling:
- 2 large potatoes, boiled and mashed
- 1 cup fresh peas
- 1 small onion, finely chopped
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt, to taste
- 2 tablespoons lemon juice
- 1 tablespoon chopped fresh cilantro
*Instructions:*
*Step 1: Make the dough*
1. In a large mixing bowl, combine flour, salt, and baking powder.
2. Add ghee or oil and mix until the dough comes together.
3. Gradually add lukewarm water and knead the dough for 5-7 minutes, until it becomes smooth and elastic.
4. Cover the dough with a damp cloth and let it rest for 30 minutes.
*Step 2: Prepare the filling*
1. Heat oil in a pan over medium heat.
2. Add cumin seeds and let them sizzle for a few seconds.
3. Add chopped onion and sauté until it's translucent.
4. Add mashed potatoes, peas, coriander powder, garam masala, salt, and lemon juice. Mix well.
5. Stir in chopped cilantro.
*Step 3: Assemble the samosas*
1. Divide the dough into 8-10 equal portions.
2. Roll out each portion into a thin circle, about 3-4 inches in diameter.
3. Place a tablespoon or two of the filling in the center of each circle.
4. Fold the dough over the filling to form a triangle or a cone shape.
5. Press the edges together to seal the samosa.
*Step 4: Fry the samosas*
1. Heat oil in a deep frying pan over medium-high heat.
2. When the oil is hot, add a few samosas (do not overcrowd the pan).
3. Fry the samosas until they're golden brown, about 3-4 minutes on each side.
4. Remove the samosas from the oil and drain on paper towels.
*Step 5: Serve and enjoy!*
1. Serve the samosas hot with your favorite chutney or raita.
